Blue Springs State Park, Florida
You can rent canoes and go out on the water in the park.  Although we didn't do this, I would recommend it.  Canoeing through Florida's waterways can be quite rewarding- you get close-ups of the wildlife, including alligators and manatees.
 


This close-up of the above image shows fish nests.  Rather large fish scrape the bottom clean with their stomachs and use it as a nest- even this close to the canoes
