Iguaçu Falls, Brazil 
If you go to Brazil, one place you should visit is Foz do Iguaçu, or Iguaçu Falls.  There are almost 300 cataracts, or falls, in a 3 km. area.  They are multi-level, heavily forested, and easily accessible.

The shot above, although not displaying the most depth due to the misty nature, was my favorite shot.  This is from the Brazilian side, and the walkway is halfway down the falls- there are gigantic falls just off the left side of the picture, and where the platform ends, the water plunges further down the gorge.  Plus, you are also facing the falls on the Argentinean side in the back of the picture.

The facilities here are excellent, on both sides of the river.  There is a (somewhat expensive) pink flamingo style hotel that offers rooms with a view of the falls.  There are numerous tours you can take, from boat rides under the falls, helicopter rides over the falls, hikes along the falls, and bus rides to the Argentinean side of the falls.  Or, you can stay on the Argentinean side (although I think the Brazilian hotel is nicer).
