Ely Cathedral
Ely's a small town, but boast the third largest cathedral in England.  The present church was started in 1083, and completed in 1190.  The octagon was added in the 14th century after a portion had collapsed.  Unfortunately, this unique structure was closed off for restoration, but you can see the outline of it in one of these pictures.
